Random Thoughts Feb 2012

Wrote this last night-

So I’ve been posting a lot lately for 2 reasons- I’ve had a lot of pain lately and a lot of insomnia.  Here I am with both of those conditions. Here’s some random thoughts

Pain-

Quick note- I’ve gotten a lot of feedback on the fibromyalgia facebook wall but those in the blogosphere do you normally have localized pain or is it all over?  I actually don’t have pain all over.  It is specific unless I’ve particularly exercised another part that day.  I ALWAYS have pain in my ribcage- all over the ribcage, sternum, side.  It is tender to the touch.  Hurts to wear a bra or any clothing. Swimming is oddly fine but it is sore no matter what I do.  I live with a minimal level of pain but some days like today it was so sore and when I touched it the muscle feels puffy and swollen…I’m going to the doctor Monday but I’m just curious if anyone has heard of anything like this? The odd thing is my doctor gave me muscle relaxants to take in an emergency and they seem to do nothing.  Its like the bones hurt.

Friends-

However, I pushed forward and had a good day anyway.  My friends have kept me really busy lately which has been a HUGE blessing in so many levels.  I will never be a girl who complains about not having enough friends- at least I shouldn’t.  I have my swim friends, my church friends, my long-time friends, my friends who live away from me who I chat with via facebook, my siblings and family.  My cousins are my friends. Even my Grandma is one of my best friends. I just think of all the sad people I used to meet on my mission who would let us in just so that I spoke to someone during the day and I remember how lucky I am. I work really hard at my friendships but still I am very blessed.

Food-

Ok.  Lately I have been struggling with food.  All food looks gross to me. I have no energy to cook and especially clean. I love having people over for the company but also because it forces me to cook! I’ve had mixed luck with the crockpot of late. I think it works great for roasts and bbq pork but other dishes have been mixed at best.  I usually end up eating out or at Harmons. Sometimes I wonder if this saves me money.  I was thinking about that yesterday when I got a salad at Harmons and for me to buy portabello mushrooms, chicken, mixed greens, bell pepper etc would have been a lot more than the $7  I spent on my salad.  Plus, I would have had ingredients left over I wouldn’t use and it would take me forever to cook, chop up all those ingredients.  Thoughts?

Oscars-

So the Oscars are tomorrow and I could really care less about Hollywood and its awards (Is there a more self-congratulatory group in the world than Hollywood?  There is an awards show every day).  I do like the fashion.  This year is fun because I have actually seen 5 of the 9 movies nominated for best picture- Tree of Life, The Artist, The Help, Hugo and Midnight in Paris. If it was just me picking I would give the prize to The Help and I would have nominated Harry Potter for best picture, but I loved The Artist and Midnight in Paris also.

Also, if Tree of Life doesn’t win for best cinematography than the category has no meaning.  I wish that the documentaries would come to the theaters.  They sound pretty interesting.

I think The Artist and The Help will win most everything and they are great movies and deserve it.

(Also, I think Jean Dujardin should win for best actor and tired of everyone comparing him to Roberto Begnini.  What you can only give an Oscar to a foreigner every 20 years? Plus, their movies are totally different).

Television-

So today on lifetime (I was resting before my busy day) they had 4 movies in a row (no I did not watch them) about abducted children.  There’s a laugh riot for your Saturday morning…

Fun times-

So today was really fun. My friend Tennille asked me if I wanted to go to the show at Hale Theater West Valley-  Zorro: The Musical.  It was the US Premiere!  I love Hale Theater and jumped at the chance to go.  Before the show we went to my favorite sushi place- Nagoya Sushi in Midvale (this random little place in a strip mall but it is so good. We had 2 kinds of sushi, tempura vegetables and gyoza for $26. There’s no way I could have made all that for $26.).

Anyway, the show was great!  So fun to see a show in development.  I am sure by the time it makes it to broadway they will work out some of the kinks.  The performances were all very good, as is almost always the case with Hale (the last one I saw was a rare miss so nice to see them back on track).  It was fun to see a show that I didn’t know the music for, made it a surprise.

Rachel’s Homemade BBQ Sauce

I love sauces.  One of the hardest things about sticking to a low GI diet is that most produced sauces/dressings are high in added sugar.  In addition, most not only have sugar but have high fructose corn syrup which is like concentrated sugar.  This left me with dry, boring food.  😦

Lately I’ve been experimenting a lot in the kitchen and trying to come up with recipes that are low GI and taste good.  I’ve had 2 less than stellar successes but today I think I scored.  ( I tried to make enchiladas with my own enchilada sauce and they were such a disappointment.).

I have made my own barbeque sauce!  BBQ sauce is usually loaded with sugar, molasses and honey.  Especially my favorite, Kansas city style, which is a dark, rich sauce.   Now I made this sauce with agave but you could use coconut syrup or brown rice syrup or yacon- whatever low GI sweetener floats your boat.  I don’t think stevia would work as well in this recipe because it isn’t a liquid syrup but you can try it!  I am also not a fan of splenda. Its not natural like the stevia or agave plants and to me it has a chemical aftertaste.

One thing you have to remember is that any sweetener is just that a sweetener but some are absorbed less quickly and converted into glucose.  Its kind of like the difference between whole grains and white flour.  They are both grains but one is absorbed more quickly than the other.  Our bodies are designed to taste sweet, salty, sour, bitter, and unami, and I believe it is important that any diet for it to be a realistic lifestyle change must incorporate all of these taste buds.  They are there.  They aren’t going away.  Doing a sugar fast may be helpful to change habits and lessen cravings but unless you cut out your tongue you will always want sweet.

So, my goal is to find ways to satisfy my taste buds without raising my blood sugar levels (and its working I haven’t had a high reading in a year).  I try (sometimes unsuccessfully) to take regular dishes and lower the simple carbs and substitute/reduce the sugar in them.  (Any recipes you have in this regard I’d love!).

My sister and a friend are coming over tonight and she suggested we make this soda pop crockpot pork I’ve made in the past.  At first I thought, no way!  If there was ever a dish loaded with sugar this is it.  In addition to 2 cans regular cola an average recipe has 1 cup or more of highly sweetened bbq sauce and an additional 1/2 cup of brown sugar.

One of the things I admire about people like Elana Amsterdam is she hasn’t let her celiac disease stop her from eating anything.  She finds a way to make cupcakes, cookies, crackers, pies all within her food restrictions (she also uses agave and explains why).  Amy Medling is another good example.  Her menus are so full and rich and yet completely PCOS/Low GI friendly.

I think an attitude of looking at food limitations as a fun challenge, not as a burden, is very commendable.  Sometimes I feel like all I get is one more thing I can’t eat each day (especially during the sugar fast, someone told me I couldn’t eat sugar free gum and I about lost it.  I couldn’t take all the no’s anymore!).

Never to be undone by a challenge I decided to go for it.  The pork is brewing in the crockpot right now but I have a feeling it will be delicious.  I used oogave cola soda .  This soda uses agave instead of high fructose corn syrup or sugar.  Again, its not about it being a non-sweetener because it is but it is a better choice.

So, then I added a cup of my awesome homemade bbq sauce.  Even if the pork doesn’t turn out it was worth it just for this recipe I invented. (And remember you are using just a little bit of sauce.  The recipe makes over 4-6 cups.  (I didn’t measure the final amount but it was a lot).

Here goes:

Homemade Low GI BBQ Sauce

1 large can tomato sauce (or pureed tomatoes in a blender and strained)

1/2 cup of water

1/2 c balsamic vinegar (doesn’t have to be the fancy stuff.  I used some I got from the dollar store!  Save the good stuff for bread or strawberries.  I think you could also use apple cider vinegar which has some health benefits but it wouldn’t give you the dark KC BBQ look.)

1/3 c agave (can add a little more depending on taste)

1/2 tsp onion powder

1/2 tsp garlic powder

1/2 tsp mustard powder

1 tbsp chilli powder

1/4 tsp cayenne

1/2 tsp salt

1 tbsp yellow mustard

2 dashes of liquid smoke (start small and can add more because it packs a punch)

1/4 c Worcestershire sauce (this does contain hfc and sugar but it is such a small amount for a large quantity of sauce that I wouldn’t worry about it.  If anyone knows of a Worcestershire sauce that doesn’t have added sugars let me know. )

Mix all together with a whisk until it boils and then quickly turn to med low and let simmer for 45 minutes.  Then bottle and store in your fridge.

Rachel's Homemade LOW GI BBQ Sauce!

I’m really excited about this recipe.  I think it will be great on hot dogs instead of ketchup (and I do intend on making my own Low GI ketchup) or with sweet potato fries.  With roasted chicken it would be delicious, or on ribs it would be fabulous.   There is tons of potential.  Hurray!

Here is the pork

agave bbq pulled pork

The pork is a 5 lb pork shoulder rubbed with salt and pepper.  Then you put it in the crockpot with an onion sliced up, 2 cans oogave cola and a cup of Low GI BBQ.  Let cook on low for 6 hours.  Then drain most of marinade, shred pork and add another cup of sauce, heat on high for 1-2 hours.

The pork was tender and full of flavor.  I really liked it.

Maggie Goes on a Diet

I am so fired up and upset that I can barely put my words together.   What has me so up-in-arms you ask?  Well, I just found out about a book soon to be on the market for children as young as 4 called “Maggie Goes on a Diet” by Paul Kramer.  In this book he says that poor Maggie was bullied and made fun of so she looked in the mirror and wished she could be thin. If only she was skinny all Maggie’s problems would melt a way. (as someone who was a Maggie in school such experiences are brutal and not necessarily limited to fat girls.  If kids want to bully they will find a way).

To calm her troubled heart she then does what all overweight children do- she went “searching the refrigerator in hopes she would feel better” . (Because all children have full access to the refrigerator at home- no adult supervision in the middle of the night! I hope you catch my healthy dose of sarcasm in the above paragraph!)

Seriously, what is wrong with people? Fat children are not searching through the refrigerator in the middle of the night to calm their troubled self-esteem.  Give me a break!  I ate the same as everyone else but my body processed it differently. All junk like this does is make overweight kids feel guilty about every last treat, every piece of bread, they eat.  Hey, here’ s a thought- how about actually teaching them about their bodies, how cells absorb food, how some people have different blood sugar responses?

Many people believe children are too stupid to understand their own bodies and the complex goings-on inside.  I disagree.  I judged a 6th grade science fair a while back and the experiments were remarkably complex.  If they can understand the intricacies of electricity or volcanoes give them a shot with their own bodies. I think we’d be surprised.  In my experience anyone who actually understand how their body really works instead of just focusing on weight feels much better about themselves.   Ahhh! I’m so frustrated by this.

Maggie stares in the mirror at a skinny version of herself and knows that if she could only be thin her life would be better. She would be more popular and happier- a better person.  You know who stares into a mirror and thinks being skinnier will solve all your problems?- the millions of girls in eating disorder clinics and rehab.  I have known people going through eating disorder treatment and it is brutal.

To make matters worse in the book Maggie actually does become popular after losing weight and she even ends up as a star soccer player (because if all fat people would only exercise a little they would become star athletes- almost as dangerous a promise as becoming popular). I just lost a lot of weight where’s my star athletic prowess and hidden popularity?  What a terrible expectation to set up for children- on so many levels.

As I mentioned in a recent post skinniness as a goal is foolish because it is a unclassifiable term- meaning who’s to say what being skinny really means? Is it Twiggy from the 60’s or is it a more muscular Cindy Crawford?  Who is to say?  By focusing on being skinny there is no end, nothing is good enough and most people become obsessed with it.  It overtakes your life and all that matters is your appearance which is part of the reason this book made me so mad.  The focus is on becoming skinny and how that will make you happy, popular and athletic.  That’s just not true and it it can be a dangerous message.


Maggie is also shown as losing the weight in a fast time period by “eating fruit and oatmeal” and “exercising more”.  Tell that to the constantly on a diet 16 year old me who life guarded and swam competitively.  Tell that to the kids who eat their oatmeal and fruit but still are chubbier than all the other kids.

What are we doing in our society?  Why can’t we just love people especially little children?  Why does everyone have to look a certain way to be accepted?  Why can’t we discuss concerns of health on their own accord without them being wrapped up in vague images of being thin.  It makes me so mad.

I still remember the first time I was told I needed to diet.  I was 9 or 10.  It was my parents and despite their best efforts it is seared in my brain for all time.  At least they didn’t try to pretend I would be more popular or be good at sports if I lost weight.  It still felt like a great sin I had inadvertently committed- something that was my fault but at least I knew they loved me and would accept me either way.

The book also fails to mention that children are not responsible for the food that is served to them- whether it be at home or at school.   (My parents did serve healthy food and I was still fat but not all parents do).  What is a child supposed to do force his or her mother to make oatmeal?  Tell the school lunch lady that they can only make Low GI food?   Give me a break!  The book treats a child as an adult who can make all her own decisions and doesn’t even mention parents or parental support.

The author says he wrote the book to let children know “they are not alone in their struggles.”  How does reinforcing stereotypes, creating false promises and promoting eating disorders do anything but make a child feel more alone, more ostracized?  Did the author think of what a little girl will feel after reading his book, eating oatmeal and fruit, exercising and yet somehow she’s still fat?

How about we teach that little girl that making healthy choices is good regardless of the physical ramifications?  How about we teach her that she has intrinsic value and that her body is beautiful and special?  How about we look at each individual child and find out how their body is absorbing food and give them the right food choices? How about we teach a child that the formation of your character is not related to the weight of your body? You are not a bad person if you are fat.  I wish someone had taught me that years earlier…

I would like to write a book like that.  Maggie and her Healthy Heart.  I’m seriously so mad about this I want to scream.  Mainly because I know the hurt the little girls who are unfortunate enough to read this book will feel and believe me they are not turning to the fridge for comfort.  They are turning to their pillows wet with tears.

In my experience the only way to be happy whether skinny or fat is to accept yourself- flaws and all.  We all have imperfections and yet our family loves us- we should love us too!  Only then is weight loss typically successful and long-lasting.  Even when you are skinny you are still the same person you were before just with a little less baggage.  The core is the same.  Focus on making that core strong and then you will be happy at any size.  Let’s teach our children that message!

Surely America we can do better than this crap. Please lets do better.
