Movie Munchies 1: Apricot Chicken/Blind Side

Hi guys!  I wanted to share with you a very exciting video I just posted on my youtube channel.  It’s called Movie Munchies where we will review a film and make a recipe on the same video.  This week to celebrate the Super Bowl we are talking about 2009’s The Blind Side and making my favorite apricot chicken drumsticks- perfect for game day.  This was a huge challenge for me and I would love to get your feedback.

We’ve already got episode 2 filmed and will probably do this a couple of times a month.  If you have any ideas for good movie/meal parings please let me know!

Making this video required a whole new kind of editing and filming for me so I learned a lot but I’m really excited for the future.  I loved my chemistry with Jacqueline and found the entire experience very rewarding.  I know each episode will only continue to improve.

Recipe-
3 lbs drumsticks or other meat
1 cup onions diced
1 cup bell peppers diced
3 cloves garlic minced
1/3 c soy sauce
1/4 c firmly packed cup brown sugar
1/4 c molasses
1/4 c honey
1 14 ounce bottle ketchup
2 tbsp Worcestershire sauce
hot sauce to taste
1 jar apricot preserves
Olive Oil
Heat up onions, peppers, and garlic till translucent. In separate skillet sear the chicken on high heat to get a golden brown color. Add all ingredients except for jam, heat and then let simmer till it thickens.
Add apricot jam to mixture and poor over chicken.
Bake at 400 degrees for an hour, remove tin foil at 30 minutes. Test with thermometer. Want chicken 165 degrees or higher.

Rachel’s BBQ Rub

Hey guys!  It might surprise you that one of my most popular blog posts over the years was a recipe for BBQ sauce I did when I was hard core on the low sugar thing.  It is a fun recipe and lots of people have tried it and liked it.

Rachel’s Homemade BBQ Sauce

My friend invited me to a handmade item co-op tomorrow where we swap items that we have made by hand.  Can be anything from soap to jam to cheese.  I love making jam but didn’t feel up to it this week and they didn’t want sweets (was going to do chocolate covered strawberries!).

I just couldn’t take on a bit project like making jam this week so I thought long and hard about what I could make because I don’t sew or knit or do a handicraft I could swap.  The best thing I could come up with is to make a spice rub.  I looked at some recipes and came up with something I liked. It’s a little sweet and spicy and would be great on pork, poultry and fish.

I also found these jars on amazon with blackboard stickers and I just think they are darn cute.

Rachel’s BBQ Rub

1/2 c paprika

1/2 c brown sugar

2 tbsp chili powder

2 tsp cayenne pepper

1 tbsp onion powder

1 tbsp garlic powder

1 tbsp parsley flakes

1 tbsp salt

1 tbsp black pepper

Pretty simple just mix everything together and put in jar.  The paprika and brown sugar will clump up.  If you don’t like spice than omit or only 1 tsp of cayenne pepper. If you want it sweeter add more brown sugar. It seemed like every batch I made I added a little more of one thing, a little less of another so it just depends.

It was so fun hearing people’s changes and success with the BBQ sauce recipe so I’d love to hear it on this as well.  Please share!

Summer Updates

S0 it got to be 103 degrees today. Let’s just say SUMMERRR is here! I have been having a great time.  Summer is always so much more fun for me than Winter.  Just the addition of open water swimming makes my life better.  (Swimming in an indoor pool just isn’t the same). I’ve been able to see all my swim friends that I somehow miss in the winter.

I’ve been to plays including Wrinkle in Time at BYU which was mind blowing and Tarzan at Scera which was good.

I’ve been reading a lot, especially rereading Jane Austen to get ready for book club. Its funny because I talk about them a lot but I haven’t actually read them in a long time.  They are just as brilliant as I remember.

I’ve been swimming up a storm.  I wish I could go everyday but with work and other responsibilities there just isn’t time.  Went last Saturday to Deer Creek and today to Blackridge Pond in Herriman.

Other fun things…I performed in master class on Wednesday and sang Wishing You Were Somehow Here from Phantom of the Opera.  I’m no opera singer but it was fun to let my diva out.

Speaking of diva’s Drop Dead Diva started on lifetime which made my BFF Emily and I very happy. We had dinner together and a little diva watching party.  It did not disappoint.  Great season opening.  I think made even better by the fact that it almost didn’t happen.

emilyThe meal turned out really good.  It was buccatini (my new favorite pasta) with fresh cherry tomatoes, sausage, parm and fresh herbs from my container gardens which drumroll ARE STILL ALIVE!

I went to a Josh Turner concert with my friends Emilee and Rachel M (I know a lot of Rachel’s and Emily’s!).  He was super entertaining and has the most sexy voice I think I’ve ever heard.  Its low and he has an old fashioned southern drawl.  His band was really good too.  It was a great night.
